Hirakawa Winery has been producing wines to accompany the gourmet cuisine.
Margotto's cuisine with Australian black truffles, which are at their peak of season, will be paired with the Hirakawa Winery.

Atsuo Hirakawa
Born in Takao, Hachioji City, Tokyo in 1973. Raised in Aichi and Mie prefectures.
After graduating from the Faculty of Agriculture at Tokyo University of Agriculture and Technology, he went to France with the determination to succeed as a sommelier.
He graduated with a Diploma of Distinction in Oenology (DNO) from the French Ministry of Agriculture and Fisheries and a Bachelor of Technology from the Department of Viticulture and Oenology at ENSA Agromontpellier, France's national training institute for technicians, and then graduated at the top of his class from the DUAD, the University of Bordeaux's Faculty of Oenology.
He worked as a sommelier at a Michelin-starred restaurant in France before returning to Japan in 2008.
In 2009, while working as chef-sommelier at Michel Brastoya Japon, he discovered the potential of Hokkaido's wine-growing regions.
Aiming to produce wine as a food wine that goes well with food, he established “Hirakawa Farm” in 2014 and “Hirakawa Winery” in 2015 in the Sawa district of Yoichi Town.
Currently, Hirakawa Farm owns 21 hectares of farmland in the Sawa district of western Yoichi Town, and produces 50,000 bottles of wine per year by parcel. Making the most of their experience and sensitivity, they are pursuing world-class quality from the agricultural field in Hokkaido.
